Our three main types of Maltese honey

Spring honey

A multifloral honey collected by the honeybees from different floral sources such as borage, red clover, citrus, thistles and it is generally of a light yellow colouration. This type of honey is generally produced by the honeybees from March to May, it tends to crystallize into a dense light coloured medium.

Summer honey

A mono floral honey and is light orange in colour. It also incorporates an intense thyme aroma. It is generally collected by the honeybees during the months of June, July and August from the North-Western parts of Malta, Gozo and Comino where vast Maltese wild thyme (saghtar) flourishes on the garrigue. Generally this honey type remains in liquid form and will not crystallize easily.

Autumn honey

Usually a dark honey, collected by the bees from September to October from the carob and eucalyptus blossoms, commonly found in Malta. This delicious honey has an intense aroma and tends to crystallize into a creamy light to dark brown consistency.
